New West KnifeWorks Fusionwood Knife Review

Hand-crafted Knives by New West KnifeWorks

Fusionwood Knife Review

When we first saw the knives provided to us from New West KnifeWorks, we spent several minutes admiring the craftsmanship. The hardwood veneers used for the handles are richly colored with dye and fused together with engineering-grade resin. With all materials made in America and steel blades cut and ground by American craftsman, we feel like we have a piece of American art in our kitchen. The materials used to make the fusionwood handles are produced in Vermont and are assembled, shaped, and finished by hand in Shelburne Falls, Massachusetts.

Sharp and strong, yet very beautiful!

Each knife also comes with a beautiful leather sheath.

New West KnifeWorks Steel Blades

The high-carbon chromium steel blade is strong, durable, and designed for easy sharpening. The tang extends into the full length of the handle. This is a feature that we look for on any knife – both in the kitchen and for outdoor use – because it ensures balance and control as well as provides a stronger knife. In addition to holding an edge, their knives have a Rockwell Hardness of 59-60. You can see in the video that the single piece of steel is designed to be strong and will withstand bending.

Multihued Cocobolo Knifeblock

This Multihued Cocobolo Knifeblock set shows the variety of handle styles available. With this set, you will have a knife for every job in the kitchen: The Super Bread, Santoku, Chopper Chef Knife, Pety Utility knife, Mini Chopper/Cheese Cleaver, Paring and Mini Paring knives.

Not only do they look really nice, but they are also very sharp. Perfect timing for all the tomatoes and squash in our garden.
